It's Fall once again! That means it's pumpkin and squash season!! I
love me some squash! You can bake it, mash it, make a pie with it or add
it to a cookie, cake or bread mix. It is awesome!!
Though
hands down my favorite way to eat it is in a soup. In this form it
seems quite healthy and so I don't feel guilty when going back for
seconds. hehehe
Here is the Basic Recipe I use to make the soup. It is how my
Boyfriend makes it. We never really follow a recipe anymore so I don't
have exact measurements. So feel free to make it how you like.

Pumpkin/Squash Soup
- One medium
sized squash (I have used Butternut squashes and Pumpkins so far. Both are Delish!)
- A few carrots,
peeled and chopped (We used 5 this time, But 3 to 4 is probably best.)
- 1 medium
Onion, finely chopped
- Butter
- Veggie bullion
- Salt and
Sugar
In a large
pot throw in some butter with the onion and carrots, sauté them for a while till
the onions start to loose their color and become transparent, then add the chopped
Squash.

While the veggies continue to cook, allowing the squash to brown a bit,
bring some water to a boil, and mix in vegetable bullion, to make a broth.
Once the
squash has been cooking a while, add about half of the hot broth to the pot.

Allow the pot
to boil and simmer until the carrots and squash fall off the fork.

When it is
all well cooked, remove the pot from the flame and blend it all together, adding
the remaining broth and some salt and sugar to taste.

Depending on your preferred
consistency you can add more broth or just some water.

To add just an extra little bit of pizazz to the soup, we make some Bacon Croutons.

Which is very easy to make. Fry some finely chopped bacon in a pan with some butter and add in small chopped squares of bread. Be careful not to burn the bacon. Serve each of the portions of soup with the croutons.
